Lentil & Ham Stew

Having one income means you often have little left over for fancy meals when it comes time to grocery shop, though being creative on a budget is still possible. I found a recipe somewhere a long time ago for a more complicated version of this stew and I pared it back to the essentials for us. Nothing is written in stone and feel free to sub out different things to your tastes.

Lentil & Ham Stew

Serves approx 6

10 min prep Cook 4-5 on high or 7 to 9 hrs on low

3 cups diced ham

2 cups dried lentils

2 cups each diced carrots and celery

1 cup chopped onion or 1/2 cup dried minced onion

1 Tbsp minced garlic

4 cups water

1 tsp dried oregano

2 1/2 cups chicken broth

1/4 tsp each salt and pepper

1 (6oz) bag of baby spinach leaves

2 Tbsp lemon juice

1. Mix all ingredients except spinach leaves and lemon juice in a 3 1/2 quart or larger slow-cooker. Cover and cook on high 4 to 5 hours or on low 7 to 9 until lentils are tender.

2. Stir in spinach leaves, cover and cook 5 min or until tender. Stir in lemon juice.

I like to serve this with toasted French bread to dip.
