Pumpkin Waffles

A very simple pumpkin waffle recipe that you can also use for pancakes.

Pumpkin Waffles

I love pumpkin! I love the taste of pumpkin, I love the smell of pumpkin. I even have pumpkin scented candles all over the house. Pumpkin is one of the main reasons fall is my favorite season. I love pumpkin pie, pumpkin muffins, pumpkin bread, pumpkin cake, and even pumpkin soup. I cannot wait for fall, I need pumpkin now, so.. here are some pumpkin waffles!

I actually make a super simple pumpkin waffle batter, than can be used for both waffles and pancakes. In fact it's so simple, I need to make a butter compound just to make this posting longer than 1 paragraph... well that and this butter tastes super good on pumpkin waffles.

For the butter, I take 1 stick of butter, 1/4 cup of powdered sugar and 2 tsp of cinnamon, and put them in a bowl.

Then I mix with my electric mixer until it all becomes nice and smooth. Then I just chill it in the fridge until my waffles are done.

Pumpkin Waffles

6 Tbs butter melted
2 large eggs
2 cups milk
1/2 cup brn sugar
1 15oz can pumpkin puree
2 cup flour
1/2 tsp salt
1 Tbs baking powder
2 tsp cinnamon
1/2 tsp nutmeg

I begin by putting my melted butter, pumpkin, and brown sugar in a bowl.

I stir that till it is nice and smooth, then drop in my eggs.

I mix that on high for about 3 minutes.

I then take all my dry ingredients and combine them and add them to the bowl.

I mix that on high until everything is smooth.

I then just let that sit for 5-10 minutes.

In the mean time, I heat my waffle iron.

I also heat my oven to 250 degrees. I also lay a sheet of tin foil on the middle rack of my oven. (sorry no pic of my oven)

I cook each waffle in the waffle maker for 4 to 4 1/2 minutes. Once the waffle is done, I just set it on the foil in the oven to stay warm.

I usually spray the waffle maker after every 2 waffles with butter flavored cooking spray. This ensures my waffles do not stick.

Once all my waffles are done, I put them on a plate, scoop on a scoop of my butter, and drizzle on honey or syrup.

That is it.. short and sweet.. oh so wonderfully sweet and tasty...
