Leftover Taco Rice Breakfast Burrito For Dinner

My recipe is made of:

Dozen Eggs

6 Potatoes

Leftover Taco Rice or one package if making at dinner time

Lunchmeat Ham

Shredded Cheese

Small Onion

Salt & Pepper

Garlic Powder

Taco Sauce for your taste as well as sour cream

I usually have extra taco rice for our taco nights,so I decided to figure out how to put it into a new meal.You of course can make the rice the same night as this just as easily!

  1. I wash,peel and dice my potatoes,so I can get them going since they take the longest.I usually just fry them in a pan or bake them.
  2. Reheat the taco rice and start a new package up in a different pot and set aside till the potatoes are done.
  3. I beat the eggs and add salt & pepper and garlic powder.
  4. Once the potatoes are done I add in the small diced onion until they are softened.
  5. Next I add in the diced up ham and taco rice all into the pot with the potatoes and onions.
  6. Last I cook the eggs in a pan and add them in the end with everything else.
  7. Grab a burrito or two,add your favorite toppings and roll it up and enjoy!
