DANISH Pancakes

Served with sugar and butter, syrup (best with maple), jam, nutella or other sweet condiments. Also really good cold with ice cream in then for dessert. Well-suited for ‘special’ breakfasts, sweet snacks and desserts.

DANISH Pancakes

For around 12-ish pancakes

3 eggs

4-5 dl milk

4 dl flour

2 tsp of vanilla sugar, or equivalent

Mix all ingredients into a mixture the consistency of thin yogurt. It’s a pretty good pointer, at least. Fry on a thin frying pan with around 1 tsp. of flour for every 3 pancakes. Heat the pan properly for the first one, or it has a tendency to get soggy. Pour dough on to the pan, and spread it around by tipping it to the sides. A spherical shape might be preferable, but I’m not judging. Fry on the first side until the top is almost stiffened. The bottom side should be golden-brown. Fry the other side until it ‘lets go’ of the pan.
