Chipotle Roast Potatoes

A super simple side with a little bit of kick.


Chipotle Roast Potatoes

Roast potatoes are so simple it feels kinda silly to post about how to make them. On the other hand, they were so good, I would feel like I was hiding something if I didn't share them with you. So, here is a very simple side dish you can use to compliment pretty much anything.

With roast potatoes, you really can put just about any combination of seasonings together and get a good result. I chose to do a spicy chipotle variation to compliment my ham.

I started with 4 medium potatoes. I cleaned the, then cut each potato into 8 pieces, and put them in a bowl.

I poured in about 2 Tbs of olive oil and tossed it with a fork to coat.

I them tossed in 1tsp Kosher salt, 1 tsp ground Chipotle, a little parsley and a little black pepper. I then tossed it.

Next I cut 1 medium onion into large chunks and tossed that in there.

I put the whole think into a foil lined baking pan.

Then I baked it at 350 degrees for 1 hour.

Once done, I just popped it all into a clean bowl (I used the same bowl, but cleaned it with soap and water and dried it before using).
